The main objective of this group is the nutritional
evaluation of plant foods by means of the characterisation
of nutritive compounds and nutritionally active
factors and their involvement in nutrition and
health. The determination and purification of food allergens
and allergenicity modifications by processing
are being investigated. Bioprocessing and technological
processes are applied to remove/reduce bioactive
and/or toxic compounds. Nutritional evaluation of
plant foods (protein and oil seeds) in monogastric animals
is also being investigated.
